New Production Facility

CMC Design-Build was selected by Cumberland Farms to design and construct a facility for the production of their fresh and ready-to-eat foods. The goal was to gain internal control over its inventory and products thereby maximizing quality and efficiency. Cumberland Farms dictated that the commissary be state-of-the-art with the latest advances in food safety and food quality. With this direction, CMC developed a design for the commissary that would exceed SQF and BRC standards. CMC completely segregated all high care and low risk areas including the plumbing waste lines. Critical Process Air systems were installed in all of the refrigerated high care areas to pressurize the rooms and provide fresh, filtered air while maintaining 38°F. The CPA systems also provided the added benefit of allowing for exhaust during washdown to accelerate the room drying time and minimize the time before production can restart.

The Cumberland Farms project has been very successful on numerous fronts. The commissary is providing Cumberland Farms the ability to have total control over their product lines including production schedules, product quality and consistency, and new product development. Furthermore, they are assured that all of their products are produced in a facility with the highest food safety precautions in the industry.
