CMC provided master planning, architecture, engineering, and construction services for Vermont Smoke and Cure’s new 37,000 SF USDA processing facility.

The facility was designed with shipping and receiving docks at opposite ends of the building to allow for a linear flow of product to maximize food safety and plant efficiency.

The processing areas include a raw processing kitchen, fermenting room, smokehouse, three blast coolers, slicing and packaging room, and casing/palletizing room. Ancillary spaces included wash rooms, separate gowning rooms for raw and finished employees, WIP coolers, and refrigerated, frozen, and dry storage areas.
